Crafting the flavors
Developing a complex, cultural flavor like buko pandan was a worthy challenge we were so ready for. Unlike crafting more recognizable notes like strawberry or orange, buko pandan had us starting from scratch.
We aimed to capture the creamy, coconutty, grassy essence of this dessert—all while keeping ingredients totally vegan and organic. It's a proud moment when you land on the best representation of an indescribable flavor like buko pandan (and in our opinion, we nailed it).

Traditionally a combination of strips of young coconut (buko), pandan (an aromatic plant with a sweet, grassy taste), tapioca pearls, nata de coco, and an ultra-creamy combo of condensed milk and heavy cream.
Buko pandan's unique combination of ingredients was born from times of war rations and the introduction to American processed foods during the American occupation from 1898 to 1946. Every family makes buko pandan a little differently, but a big, shareable vat of it is a common fixture at any large gathering within the Filipino community.
