Although citrus is a familiar flavor, calamansi is really its own thing. At first, the flavor we had was too lime-y, then too tangerine-y. Not enough lemon, then too lemony. Striking that perfectly tart balance was key. Then, all of a sudden—we struck bright, mouth-puckering gold.
